Asparagus Peas are a unique heirloom legume, grown for their small, four-winged pods, not the peas inside. The entire pod is eaten when very young and tender. When cooked, they have a flavor and texture that is remarkably similar to asparagus, with a hint of fresh pea. They must be picked when they are very small (under 3cm) to be tender. A gourmet and rare vegetable, perfect for steaming or a light sauté with butter. The plant also has beautiful crimson flowers.
