Gai Choy, or Chinese Mustard Greens, is a large, heading variety of mustard green with a robust and distinctly pungent, wasabi-like flavor. Its broad, crisp, and wrinkly leaves have a satisfyingly crunchy texture. The sharp flavor mellows with cooking, making it excellent for stir-fries, braising, and a key ingredient in soups. It is also famously used to make Chinese pickles (haam choy), where its pungency is transformed by fermentation. We supply large, crisp heads.
