Malabar Spinach is not a true spinach but a climbing vine with succulent, heart-shaped leaves and tender stems. It has a mild, peppery flavor with notes of citrus. When cooked, it becomes mucilaginous, similar to okra, making it a great thickener for soups and stews. In many parts of Asia, it is simply stir-fried with garlic and shrimp paste. We offer both the green and red-stemmed varieties.
