Poblano Peppers are a very popular mild chili from Mexico. They have a large, heart shape and very thick walls, making them the quintessential pepper for stuffing, as in the famous "chiles rellenos." When fresh and green, they have a rich, earthy flavor with very little heat. When dried, they become Ancho chilies, developing a smoky, raisin-like sweetness.
