Sugarloaf Chicory is a variety of chicory that forms a tight, loaf-shaped head of pale green leaves, resembling a large romaine heart. It is prized for being the mildest and least bitter of all the chicories. It has a wonderfully crisp, refreshing texture and a subtly sweet, nutty flavor with just a hint of bitterness on the finish. It is fantastic for use in salads as a less bitter alternative to radicchio or endive, and is also excellent when braised or grilled.
