Our White Asparagus is a true European delicacy, grown entirely underground to prevent the development of chlorophyll. This process results in thick, ivory-colored spears that are incredibly tender, with a silky texture and a flavor that is delicate, mild, and subtly sweet with a hint of bitterness. It is less grassy than green asparagus. A seasonal favorite, it is traditionally served boiled with hollandaise sauce or melted butter.
