Black Salsify, or Scorzonera, is a long, thin root vegetable with a distinctive black skin. When peeled, it reveals a creamy white flesh that has a delicate, complex flavor reminiscent of oysters, asparagus, and artichoke hearts, with a hint of nuttiness. It is considered superior in flavor to white salsify. It is a gourmet vegetable, excellent when boiled, steamed, or fried. The flesh oxidizes quickly, so it must be placed in acidulated water after peeling.

A Unique Root Vegetable: Black salsify, or scorzonera, has an interesting, delicate flavor, somewhat like an oyster or artichoke. It was fresh and firm. It takes a bit of work to peel, but the unique taste is worth the effort.
