The Water Caltrop, or Singhara, is a unique aquatic vegetable with a hard, horned, bat-shaped shell. Inside, it contains a single, crisp, white kernel with a nutty and mildly sweet flavor, similar to a water chestnut or lotus root. It must be boiled or roasted before eating. The kernel is a popular snack in many parts of Asia and can also be dried and ground into a flour used for fasting foods and gluten-free baking. A truly unique and seasonal item.
